FEAT: Add docker & docker-compose to self-hosted

id thought it'd be awesome to have Docker and docker-compose support for a smoother self-hosting experience. It'd make deployment and management a breeze for many of us.

If you're considering this, I'd be more than happy to lend a hand in getting it set up or testing it out.
