Built 3 tallys with the D1 Minis. All are working fine with the exception that one of the tally’s occasionally turns pink for a minute or two. Wi-Fi stays connected. How can I troubleshoot this?

It can be hard to troubleshoot, but if you have it connected to a computer, it will log when it looses connection to the switcher in the serial monitor. It turns pink when it looses connection to the switcher, while still having WiFi signal. If it has a weak WiFi signal it might be dropping packets, which would cause connection loss to the switcher.
