feat: move unused v1 injectors to "deprecated" subcategory

As v1 injectors are considered end of life, we should move any of them, which are not used anymore to a "deprecated" subcategory in the address book. This will help to

• clean up the Ops UI displays
• gives us clarity which injectors are still in use
• which injectors are considered to be "sunset" even though they still might have an active program. Reseting them might not be "worth it".
