Maybe if we stored a list of Discord user IDs of people that have authenticated, but not in conjunction with their minecraft username that might be okay for GDPR?
FWIW, storing a UUID shouldn't be an issue GDPR-wise since it doesn't really belong to the player, but if you're adamant on avoiding GDPR mess then consider storing a hash of the UUID instead (or just throw up a giant warning). Though, the concern about GDPR is kinda pointless anyway since the Minecraft server will automatically log IP addresses regardless.
