It would be nice to support set! for FieldTimeSeries. This is needed for further maturation of FieldTimeSeries and will help with constructing idealized atmospheric states for process studies with ClimaOcean.

PR 251 in ClimaOcean illustrates the kind of process studies using prescribed atmospheres can enable: CliMA/ClimaOcean.jl#251
