@glwagner and I were working on this and we thought that a modified version of this baroclinic instability problem might be nice to include in the Docs.

The example below is at https://github.com/navidcy/SeanHaneySymposium2025/blob/main/baroclinic_wave.jl

We can add some bathymetry with immersed boundary and also some bottom drag and thus demonstrate also how people can set up an immersed boundary bottom drag.

Any other features that might be good to showcase?

I think a periodic array of mountains might do the trick. We could also add CATKE although it doesn't seem necessary. Maybe it would do something interesting (we could try to look at the TKE for example)
