Add CI to make sure we stay up-to-date with coffea

Right now, we're doing periodic manual checks to make sure all of the files in this repo are working. This isn't ideal, especially since I've been the main maintainer and I might be moving on from the team soon! Adding something to check what breaks when a coffea update comes through would be a good feature.
