No linux/amd64 docker builds for latest tag

Please answer the following:

FPP Version and Hardware:
Docker latest linux/amd64

Describe the bug and Steps to reproduce:
A clear and concise description of what the bug is and the steps to be taken to reproduce.

1. docker pull results in ⠋ fpp Pulling no matching manifest for linux/amd64 in the manifest list entries

Expected behavior:
A clear and concise description of what you expected to happen and why.
FPP publishes arm64, amd64 and arm7 builds on docker hub.

Additional context:
Add any other context about the problem here.
Last latest tag on Docker Hub only contains arm64 builds`

Suspect issue is related to Attempt to use a matrix to build docker images that failed to build.

Please consider a dev->main->[version] pipeline to keep docker latest working as per reasonable expectation.
