QC wrapper function defaults

The wrapper functions for physics QC are described here: https://glidertools.readthedocs.io/en/latest/quality_control.html#wrapper-functions and done using https://glidertools.readthedocs.io/en/latest/_generated/glidertools.processing.calc_physics.html#glidertools.processing.calc_physics

This is great for doing a number of things at once. However, as it is currently setup the user does not have a choice to use only a subset of the default filters (all have to be used). It would be useful to set this up so that only the operations that the user wants are used.
