Documentation is missing a few key input type and examples (e.g., csv-data-dict)

Python: For an updated version of the parameters that go into the convert_to_vlmd function see here:
https://github.com/HEAL/healdata-utils/blob/main/configs/convert_to_vlmd.yaml
CLI: running vlmd will walk you through options. vlmd extract --help will also provide options

1 and 2 should be put in docs here https://github.com/HEAL/healdata-utils/tree/main/docs/vlmd/extract
