Deploy documentation with a stable release rather than nightly #881

As of #874, documentation is deployed with Julia nightly in order to work around JuliaLang/julia#49620, which affects this package's Documenter-based documentation deployment on Julia 1.9. We should be able to simply revert #874 once Julia 1.10 is released as the upstream issue was fixed in the 1.10 development cycle.
