Allow user to change the order of configuration profiles in the list

I've got quite a few configuration profiles at this point. Especially give some models are available from multiple inference providers.

But my list is jumbled, maybe sorted by which one I edited last? Not sure. It's sure not sorted usefully.

Even sorting alphabetically would help, but really it'd be nice if I could put my profiles into a specific order so e.g., all the Anthropic models are next to each other, all the OpenAI, the models I use a lot are at the top, etc.
