Just some ideas I've had that I thought I'd share to see how you like them:
Other than setting one fixed colour for enemy health bars, how about giving each enemy their own colour? Akin to how arcade side-scrollers do it, where the health bar will look like what an enemy looks. So far example, if you're fighting a wolf, the health bar would use the wolf model's primary grey colour. If you're fighting a mummy, it would be white-ish like its bandages, etc.

If Lara misses a shot, how about hiding the enemy health bar for a split second, to indicate the miss.
