I'm confused by the orientation being parallel/perpendicular? How do I interpret this? I thought horizontal/vertical would have made more sense?
Is parallel the correct setting if I'm mounting the sensor at the top of the door, pointing down? And perpendicular is if it's mounted on the side of the door, pointing sideways?

The parallel/perpendicular setting refers to how the sensor (the golden pads in particular) is oriented in relation to the way of a person passing through the door, not where it is mounted on the door.
At least with my sensor from Adafruit, parallel would mean that the pin headers on the sensor point into or out of the room, perpendicular would mean they face the floor or the ceiling.
