How do I change the keybinds in the desktop client?

After running the desktop client for the first time, it will create an options.yaml file in the same directory as the program. You can edit your keybinds (among other things) by opening this file with a plain text editor, such as Notepad++.

How do I change the keybinds in the web version?

Unfortunately, this is not currently possible in the web version.
