Mods are not being deleted #2219

After installing Stardew Valley very expanded
I applied
I then started the game which crashed
I then removed and deleted all mods
applied
Some mods were removed the a lot of them remain:

Loading

Started from a clean install
Installed the app
Installed Stardew Valley very Expanded
Removed all the mods
This worked, everything was removed

Installed the collection again
Played the game
The game crashed
Removed all the mods again
Some folders were left behind with only config.json files in them

Only folder with additional files in was UIInfoSuite2 and im confused about how this file got there as it should not have downloaded with the collection.
