V5 seems to resolve a number of issues, include [this
one](codecov/codecov-action#1580) which
happens in our repo [for
sure](https://github.com/delta-io/delta-kernel-rs/actions/runs/12403987305/job/34628440507?pr=607).

This just updates to that.
