Restore ink contract CI

In #26 I broke most of the contract CI. I'm sorry for this.

When I began that PR, there was only 1 job. We already discovered that the signature change broke that CI, so I ported it from cargo contract to Polkadot js as a work-around until use-ink/cargo-contract#1182 is resolved. Here is the working polkadot js example.

While I was working on that, additional CI went into main, which is now broken 😞

The good news is that Polkadot JS can do all the interactions, we just need to port the scripts.
