I didn't expect it to work but I am going to still post this in hopes that you might fix it for later.
I'm trying to run it on a M1 MacBook Air and it's running Big Sur 11.4. Running 2.0.5 doesn't load the game nor the setup launcher, however 2.0.0 does run the setup launcher (it still fails to load the game).
I had no idea what I was doing, but I later tried running the binary "chocolate-doom" directly and the game and all it's dependencies were also being flagged up by macOS's protections. After allowing them all through multiple attempts, I get this:
dyld: Library not loaded: /usr/local/opt/sdl2/lib/libSDL2-2.0.0.dylib
Referenced from: /Users/muizz/Documents/MacOS/libSDL2_mixer-2.0.0.dylib
Reason: image not found
...where ~/Documents/MacOS/ is the folder that holds the executable and all the libraries. That file is there, btw.
