Refactor all scripts to say "hardhat" instead of "ganache" now that ganache is shutting down #1193

Problem

We already migrated from ganache to hardhat, but there exist scripts and readmes that still mention ganache. This issue is to remove and replace all mentions of ganache with hardhat in scripts and readmes.
