For placeholders I would avoid using {{ }} because my first instict is to F12 and see why Angular/React failed data binding.
In the one place where I saw this, I was kinda excited because I thought that once the bug is fixed, it will auto-fill the email with correct data for me.

Rule of thumb, placeholders are meant to be replaced by humans, data binding by computers. Normal users should never see data binding syntax because that's a bug.
