We currently install the GraphQL plugin to Strapi, but aren't using it. To my knowledge, gatsby-source-strapi does not use it.

If possible, we should remove it since it just adds unnecessary complexity. This needs end-to-end testing with the Gatsby build to check that nothing breaks.
