Question of domain...
zerotrackingpolicy is available in practically all TLDs (question here would be what to pick, .net, .org, .online ...)

However while seo friendly its a bit a mouthful name.

Other options could be notrackingpolicy, or using - like zero-tracking-policy just to make it more appealing to human eyes...
