I prefer to turn off the Material ID display, as it makes things more compact and easier for me to read. However, some materials, for example snow (snow vs. snow_b2), gunpowder (gunpowder vs. gunpowder_explosive), swamp (swamp vs. swamp_water) and sand (sand vs. sand_surface vs. sand_petrify), may refer to multiple variations. As an example, I will sometimes excitedly find the third material to make an alchemical recipe, attempt to mix them, and then sadly turn on Material IDs to discover that I now must hope to find the Petrify spell, or perhaps a naturally-spawning source of (swamp) to get the material it was actually referring to.
Effectively I'd like a third option for the Material ID display toggle. Rather than on or off, I would like to see the ID only when a material name may refer to one of several IDs. A basic solution to my problem would be to simply enable Material IDs at all times, however, I cannot stop myself from mentally reading out the ID and repeating to myself "Poison (poison)," "Fungus blood (blood_fungi)," etc. on every unambiguous material.

I like the idea of showing material IDs only in ambiguous scenarios. Let me see what the solution to this might look like - if it requires a big re-write of material UIs then it might take some time for me to do this. Time has been scarce latey.
I had a similar idea, and my suggestion would be to show the material ID in a mouseover hover text, so that it's easy to check the material ID when there is a question, but it's not always displayed and taking up space.
