Describe the feature request

I would like us to consolidate our docs on which Postgres version is our minimum requirement (14)

Background

https://github.com/orgs/Unleash/discussions/8261 points out the inconsistency in our docs

Solution suggestions

Update docs, keeping all three version declarations, but clarifying that
Unleash <v6 PG10
Unleash =v6 PG13 (though recommending >= 14)

docs: recommend PG v13 or later (#8276)

Unify on PG v13, we had one place recommending v10, release notes for v6
saying we dropped support for v10 through v12 and mentioning 13, and a
place mentioning 14 or newer.
