Description:

Leverage a polymorphic relationship for bookings to allow future development.

Accceptance Criteria / Requirements:

AC1: Bookings should be relatable to a model e.g. Position
AC2: A booking type must be presented via the API

Additional context:

Allows future stories on mentoring sessions, for example, to have a booking.
