avoid TerraCatalogueClient as part of public api/mandatory imports

It's currently hard to use stac builder without having terracatalouge client installed.
This package is increasingly irrelevant, due to migration to STAC.
It's ok that specific collections use this, but better to not have it as a general dependency.
It does not exist on pypi, making it annoying to install.
