All is in the title : I was wondering whether there would be a way to bypass all traffic except selected domains or IPs ?

There is a more advanced way to achieve what you want. If you have a router/firewall with more advanced routing capabilities in front of (i.e. LAN side) OpenMPTCPRouter, you can use this to bypass the router. I did this in my virtual firewall stack and it's quite elegant, allowing me to route traffic to any of my three ISP's directly or via OpenMPTCPRouter. But, doing this definitely requires advanced knowledge of networks and is well beyond the typical scope of how this platform was designed.
