Hi,
The full problem and solution is explained here in French :

I can summarize it in English if needed.
I'm not quite sure if this should be configured in hotspot_ynh or https://github.com/labriqueinternet/vpnclient_ynh/

If people are interested, I made a small script to demonstrate an ~automatic setup of this : https://github.com/alexAubin/ynh-extraeth

Based on isc-dhcp-server and not on dnsmasq because I have no idea what I'm doing - though it seems to work.
