Update dependencies and micronaut artifacts to latest micronaut version

The workshop does not work out of the box with Micronaut's latest version (at time of this writing : 1.0.0.RC3). Ideally, it should be ready (or close to be) to work with the first official release of 1.0.0 which is presumably imminent.

Some artifacts used when authoring this workshop (e.g. the "mavenBom 'io.micronaut:bom:1.0.0.M3) are no longer on public artifact repositories, forcing one to change the dependency (for example in ex02/clubs/build.gradle), but the result still does not build because of artifacts name changes.
