Migrate kie-server Docker image off of CentOS Linux due to it's June 30th EOL

I have not seen any discussion around this for Drools, so feel free to close if I have missed something. Otherwise I'm hoping to get some insight as to whether this is on the roadmap.

CentOS Linux 7 will reach end of life (EOL) on June 30, 2024.

Given that the base OS for kie-server is running CentOS, it is recommended to migrate to a new operating system before June 30, 2024, to continue receiving security updates, patches, and new features.

The latest Drools is focused on Drools 8 and Kogito, there is no focus on Kie Server any more. So I personally would suggest to close this. @mariofusco @porcelli
