Update the PHP version in vars.yml to 72.

As of 12.0.4.3, Nextcloud does not support PHP 7.2.

What benefits are having 7.2 vs the current php 7 supported by nextcloud?

Once PHP 7.2 is supported by Nextcloud, we should upgrade to the latest supported version of PHP. This is just a placeholder to remind me to do that once that is supported.

It's supported now - https://docs.nextcloud.com/server/16/admin_manual/installation/source_installation.html#prerequisites-for-manual-installation.

We can go straight to PHP 7.3.
