Move wiki to docs

There's currently an in-depth wiki for GeNet and the rendered docs that come as part of the parent repo template.

We should move the wiki docs over so they are tracked as part of the core codebase (more explicit that the docs need updating when the source code is updated) and the features of the docs can be leveraged (e.g. searching the docs by keyword).

NOTE: links in other docs need to updated to point to the new URLs after this change (e.g. those in grand-net-auto).
