feat: kernel config with realtime patches (non-tkg)

If we make our own kernel patches it might be best because itll avoid unexpected behavior coming from the kernel-tkg package. The only thing that we really need is PREEMPT_RT and maybe something else for lower latency, so just using this single config might make it better.
