Would be superb to support limiting disk space similar to the Docker's --storage-opt size=30G

Hey, thanks for opening this issue!

Could I get a bit more context on what your intended use case is for this? i.e. is this for the mountpoints or the /var/lib/soci-snapshotter-grpc folder. This seems mostly like an orchestrator command, so I'd like a bit of clarity on that.
