Hi,

First of all: thanks for posting this tutorial!

On Big Sur, this procedure works almost perfectly. Almost: Apple now mounts your partition in readonly mode by default. So the first step should be: unmount your partition and then mount again.

Hmm, never mind. The apps are restored after reboot :(
