Part of this concept was a recommendation engine that would pre-filter dishes based on people's preferences, so it was never meant to show large numbers of dishes. I thing making the dishes a bit smaller and introducing a second level of pagination within each category would accomodate about 40 dishes though.
Multi-user shouldn't be a problem, but it depends on the table screen hardware. This demo was designed for a relatively low-resolution table and a single pointer. I imagine that if the table could handle multiple inputs at the same time and was sufficiently high resolution, a UI similar to this one could be shown for every seat at the table.
