Upgrade Tekton to 0.44.x #65

Hello,

Jenkins X requires k8s 1.23 -> 1.27, hence it seems like we can upgrade to Tekton 0.44.x
See here the compatibility matrix for Tekton, https://github.com/tektoncd/pipeline/blob/main/README.md#required-kubernetes-version

Can anyone share what are the steps to do that?
