Изменить тип пакета на project чтобы можно было использовать

composer create-project cekta/demo <project>

как в ларке

вот так примерно должно устанавливаться https://docs.laminas.dev/tutorials/getting-started/skeleton-application/
возможно с доп вопросами и ответы влияют на установку.

другой вариант сделать docker image который сформирует директорию с файлами
