A full selection of Apple Podcast's categories can be found here: https://help.apple.com/itc/podcasts_connect/?lang=en#/itc9267a2f12

An example for how they are implemented looks like:
<itunes:category text="Sports &amp; Recreation"> <itunes:category text="Outdoor"/> </itunes:category>

Note that main categories and subcategories are written as two separate xml nodes on the feed
