Since I would attach the RB to a projector, could it be possible to have also a little display (like this one https://www.youtube.com/watch?v=e4293TP3f3o) to display the status of the media played? For example in case of Audio CDs i wouldn't need to turn on the projector and consume the lamp but it would be useful to know the track number or the timing!

Yes, you could definitely use a screen like that. This project run VLC with the HTTP server on port 80 so you could write a script that polls http://127.0.0.1:8080/requests/status.xml to get information about what's playing and display it on a screen.
I recommend you run that script as system service like these. Hope that helps!
