PR #206 we switches the site from Jekyll to 11ty...

Some of the scripts/dependencies in the Jekyll version of the site won't run on newer versions of node. We shouldn't need any of those for the 11ty version, so we should eventually update to the current version.

  • Remove / update dependencies that were limited by Jekyll version
  • Update .nvmrc
