Why isn't QGIS.app in bin/?

I find it odd that this package installs QGIS.app (osx-*) directly in the environment prefix, whereas qgis_process.app is installed to bin/. Is there a reason for this?

No particular reason. I had to do a bunch of work removing a lot of the app stuff so it worked in conda (see qgis/QGIS#41001). I probably just managed to get it working and left it at that. I have no real knowledge (or interest) in OSX so feel free to send in a PR (although would this need to be to https://github.com/qgis/QGIS?).
