Using ds.min() and ds.max() maybe.

@ahuang11 we already check for valid_min and valid_max in rio-tiler https://github.com/cogeotiff/rio-tiler/blob/main/rio_tiler/io/xarray.py#L249-L253

Maybe that's not enough but I don't know the implication of calling min() and max()
