Doker-compose cleanup for production

Hello,

I wanted to be sure of some slight changes that can be done to the docker-compose.yml and to be sure that it should not break IRIS.

1. RabbitMQ:

• Use version without the management plugin (tag 3-alpine instead of 3-management-alpine)

2. App:

• Do not use root certificate and certificates if only LDAP & local authentication is performed (if I misunderstood this part please let me know), from what I understand i can delete those volumes:

- ./certificates/rootCA/irisRootCACert.pem:/etc/irisRootCACert.pem:ro
- ./certificates/:/home/iris/certificates/:ro

• Do not use LDAP SSL certificate if there is no mutual authentication with the LDAP server, so I can delete:

- ./certificates/ldap/:/iriswebapp/certificates/ldap/:ro

• I can delete all "environment" array as the "env_file" stores all the variables, so I can delete:

    environment:
      - POSTGRES_USER
      - POSTGRES_PASSWORD
      - ....

3. Worker:

• Same as App

Does it make sense or am I stripping some important part for IRIS?
