Add a default value for collateral asset if one exists in the whitelist. I propose: Show "DAI" if it exists. If not, try "USDC", if not try "USDT", if not just show the first collateral token in the whitelist that you find.
Note:
When user switches the network it should re-apply this logic, i.e. if there is no "DAI" on the newly connected chain, say, then choose the next one in the defined logic
If there are no whitelisted collateral tokens, then show as it shows currently (empty)
