It's fairly easy to reproduce:

redis-cli -3
> subscribe kostas
Error: Protocol error, got ">" as reply type byte

After following up on this I found out that the problem is my redis-cli version (6.0.16). Upgrading to a newer version fixed the issue.

P.s. command also failed on Redis server as well with the same version of redis-cli
