Feature request: Mesas for desert config instead of mountains?

Curious whether a tweak to the code could lead to steeper mountains with flat tops, like the mesas in some biome mods. Any idea if that's reasonably possible?

Practically anything is possible given enough free time :-)

I will throw it in the think-about-pile. Right now I am trying to figure out what I want to take advantage now that 1.14 has shipped
