You should be able to talk to the AI assistant, by sending an email to it

eg. You send it This isn't a receipt, and it will learn to not mark emails like this as a receipt in the future.
Or the reverse, "this is a receipt".
Would need a dedicated address for this to receive incoming emails. Maybe each user has their own dedicated assistant email address they can talk to.

The other thing that could be done here with regards to labelling specifically, is seeing if a user removes a label from an email, or adds a label. The AI can learn from this action for the future.
