Perhaps I've missed something but how do I use a struct with an Option in it?

Unfortunately that's not supported by https://github.com/fiji-flo/gtmpl_value

I'll work on this if I find the time, but help is most welcome.

I'm happy to help with this where I can. I am much happier working with rust than go for new kubernetes libs I'm working on at the moment. This library has made it possible which is great. I will create a pr if I can get this feature added.
